Traditionally, fresh spring harvest tea leaves naturally exhibit a grassy note, so tea masters would not sell them right away. Instead, they stored the tencha (unground tea leaves) for about 6 months inside large, sealed pottery jars to age.

By autumn, thanks to this aging technique, the tea develops a much smoother texture, accompanied by profound, complex flavors and rich aromas. Historically, tea ceremony practitioners held a special gathering just to break the seal of the jar and taste the harvest of the year.

Although modern storage and blending techniques have advanced, this beautiful autumn-tasting tradition is still alive today. Thanks to our partners at Marukyu Koyamaen, we can still experience authentic, traditional Tsubokiri matcha!
